How is maple syrup harvested and produced?

The sugar maple grows mostly in eastern North America and Canada. Maple trees reach a height of up to 40 metres. They are tapped in February to extract the liquid gold. At this time, the weather conditions are perfect for harvesting: at night, the temperatures are below zero degrees and during the day, the sun warms the earth slightly. Now the maple tree can transport the nutrients from its roots into the buds. For our maple syrup, only a part of the sap is taken from the tree (about 10 %), so that it does not suffer any damage (similar to donating blood). After harvesting, the sap is heated. The reduction creates the syrup with the unique golden colour and the unique delicious taste. Pretty cool, right?

Maple syrup – Grade A, B or C?

The quality of maple syrup is indicated in different grades. These grades, which in Europe differ from the original quality definitions in Canada, theoretically range from AA to A, B, C and D and depend on the harvest period. In Germany, however, virtually only grade A and grade C are available (as explained by our managing director Piran in his maple syrup video, English subtitles available). Light maple syrup, like the one offered here, is produced in the first two weeks of the harvest period and is called grade A. It is characterised by its mild sweetness and typical amber colour. Grade C maple syrup is a much darker maple syrup that is harvested later. This is stronger in flavour and tends more towards a reddish brown in colour. Ultimately, the grades are therefore a matter of taste. We get our young grade A maple syrup directly from a "maple syrup tapper" in Canada.

Recipes with maple syrup – vegan honey alternative

The natural sweetener maple syrup tastes delicious in muesli, on porridge, in tea and, of course, on our beloved pancakes. If you love pancakes with maple syrup, you should definitely try drizzling the liquid gold on Belgian waffles - it is rumoured that waffles are practically pancakes with a syrup trap. Maple syrup is also great in savoury dishes: caramelise your tofu or seafood with the heavenly juice. And our maple syrup also adds a special touch to your salad dressing. You can use maple syrup practically everywhere as a vegan alternative to honey. In Canada, a common saying is: "Put some maple syrup on top!" We're pretty sure that means just about anything that goes on the table.

Climate impact

At KoRo, we analyse the greenhouse gas emissions that are produced during the production of our snacks. These include, among other things, CO2, methane and nitrous oxide. Our hard-working sustainability team collects all the information to calculate a value: the so-called CO2 equivalents. We are now passing this information on to you so that you can make informed purchasing decisions and keep an eye on your personal carbon footprint. We also use these valuable findings ourselves, to try to make our supply chains even smarter in the future and monitor our CO2 footprint.

CO₂ emissions by product

To make the work of our sustainability team easier, we have teamed up with the company Cozero. They support us with their decarbonisation software to calculate the CO2 emissions of our products. Our products go through a lot before they make their way into your pantry or snack bowl, so there is a lot to take into consideration: production, packaging, and logistics – to name just the big steps.

Questions & answers: Organic maple syrup grade A 6 x 1L
No search results.

Top taste, flop shelf life

I really love maple syrup but unfortunately the last two bottles have gone moldy. I took great care with the second bottle not to wipe the rim with my finger after tipping out the syrup, but unfortunately it still got moldy! Meeeega pity! The cap can no longer be closed completely due to the crystallized residue. Maybe that's also the reason. In any case, I don't know if I want to try it a third time...

Thank you for your honest feedback. 🙏🏼 We're delighted that you like the taste so much - so it's all the more regrettable that you had problems with the shelf life twice. Of course, that shouldn't happen! Your tip about the closure and possible residues is super valuable, we will pass this on directly to our quality management team.💛 If you like, please get in touch with our customer service team - perhaps together we can find a solution that will convince you again.
