What is bulgur and where does it come from?

Before the grain lands on your table, the wheat is harvested, precooked (parboiled), dehydrated, peeled, filtered and finely ground. Bulgur and couscous are both durum wheat products that differ primarily in processing. For bulgur, the grains are steamed, dried, and then chopped into small pieces if necessary. For couscous, durum wheat semolina is moistened, rolled into balls, cooked and dried.
As a result, the taste also differs somewhat: bulgur tastes nutty, couscous is somewhat milder.

How can I prepare or cook bulgur?

Before preparing the bulgur, it is best to rinse it briefly with cold water to avoid the formation of lumps. For the preparation, simmer the desired amount of bulgur in twice the amount of salted water for 10 minutes. Then the pot comes down from the stove, cover it and, if necessary, patiently leave to swell until the bulgur has absorbed all the liquid.
