Bonbonera

The Bonbonera is the freshest date on the market and is characterized by its sweet, fruity and juicy flesh. It has a smooth, soft and thin skin.

A total of 8.2 million tons of dates were harvested in 2017. The top 10 producers harvested 89 percent of this amount. Most of the dates are processed directly in the countries of origin. Along with the dried fruits, date oil and date liquor are also widely produced.

Most of the Medjool dates from Isreal come from the so-called "Jordan Valley". The Jordan is a river surrounded by rock walls. Due to the reflections, the valley reaches temperatures far above 40 degrees Celsius.

The Bonbonera is the juiciest of all Medjool dates. It is snap-frozen directly after harvesting and thus skips the drying process.

Before the Medjool dates are packed in either 1 or 5 kg cartons, they are dried. The sugar concentration increases, which makes the date durable and transportable.

After drying, the dates are sorted. A distinction is made between Jumbo, Large and Medium. The general rule is: the bigger, the more expensive! However, the sizes have no difference in taste.

Ideally, date paste consists of only one ingredient: high-quality dates, such as Medjoul dates or Deglet Nour dates. These only have to be pureed to a creamy mass - and the date paste is ready. However, there is one thing you must keep in mind: If you want to make date paste yourself, you need a professional high-performance blender. With viscous products like dates, low-powered blenders tend to overheat. To prevent your blender from starting to smell and smoke, you can soak your dates in water for a few minutes beforehand. This will make the date paste a little thinner, but your blender will thank you for it.

Keine Paste

Die Beschreibung "Paste" trifft hier leider nicht ganz zu. Schade eigentlich. Hatte mich auf eine weiche Paste zum weiter verarbeiten gefreut. Leider ist das ein total harter Block und selbst mit dem Messer kaum zu schneiden. Muss die "Paste" in Wasser einweichen, um sie überhaupt verarbeiten zu können.

Leider viel zu hart

Die Dattelpaste ist leider viel zu hart. Beim Versuch, die klein zu kriegen ist mein Mixer kaputtgegangen. Gibt es hier eine Tipp wie man sie weich kriegt?

Gerne wieder!

Hab es das erste Mal gekauft, damit ich beim Backen mal etwas Neues ausprobieren kann.
Brauchenoch Übung, um die Paste besser zu verarbeiten zu können, - im normalen Teig löst sie sich nicht auf, aber wenn ich sie vorher in warmen Wasser mixe, dann geht es recht gut..

Date paste

Recently arrived but now quite hard to work with. Almost impossible to cut even with a knife. I imagined it would be softer. It has more the consistency of bread and ended up destroying my blender
