Birch sugar and xylitol - what are they?

The words birch sugar or xylitol are used synonymously for xylitol. This is a sugar substitute that we produce from corn cobs: Because the leaves and remains of the corncob naturally contain xylan! This is then converted into crystalline xylitol. Sounds complicated, but it works great in practice: birch sugar has almost the same sweetening power as sugar; with 40% fewer calories per 100 grams*. Moreover, it does not have an unfamiliar taste like coconut blossom sugar. And it even has some health benefits. We quote the European Commission: "Consumption of foods/drinks containing xylitol instead of sugar causes blood glucose levels to rise less after their consumption than when consuming foods/drinks containing sugar."

Xylit vs. erythritol – which is the best substitute?

Along with xylitol, erythritol is also a beloved sugar substitute. But which one is best for which uses? Xylitol is the one closest to refined sugar. You can substitute it 1:1 with refined sugar, it does not crystallise when baking and can be used for doughs and jams, as well as caramelisation. Erythritol is better suited for ice creams and drinks. A healthy lifestyle requires a varied and balanced diet. It is therefore difficult to label a food per se as healthy or unhealthy. Our xylitol scores above all with 40% fewer calories than household sugar. Consumption of foods and beverages containing xylitol instead of sugar causes the blood sugar level to rise less after consumption than when consuming foods and beverages containing sugar.
Xylitol has almost the same sweetening power as sugar, so you can use it 1:1 in your recipes and baking. If you can't wait to start baking, you'll find great recipes in our Food Journal. A fruity jam and chocolate peanut cake are just waiting to be tasted. Even sugar-free candies are possible!
Excessive consumption of xylitol can have a laxative effect. This can lead to flatulence or diarrhea, among other things. That is why it is recommended not to consume more than 0.5 grams per kilogram of body weight per day. But breathe a sigh of relief, unlike other sugar substitutes, the body can normally get used to the xylitol dose, which means that you can increase the amount slowly. If you are unsure or show signs of an intolerance or allergy, please consult your doctor. or your doctor.
100 grams of birch sugar contain 240 calories. By comparison, granulated sugar has 400 calories for the same amount. Xylitol thus has 40% fewer calories than the conventional variant.
Xylitol is popular in toothpaste, mouthwash and the like, and many dentists also rely on the sugar substitute for dental care. The fact is: consuming foods and beverages that contain xylitol instead of sugar helps maintain tooth mineralization.
Our xylitol is industrially produced from the xylans in corn. Xylose is released from the corn cob residues at temperatures of up to 200 °C and using sulfuric acid or sodium hydroxide solution. The xylose is then converted into xylitol with a catalyst under high pressure.
Many diabetics use xylitol instead of sugar as a sweetener. However, to what extent birch sugar is suitable for you with a blood sugar disorder, you should clarify with your doctor to be on the safe side.
Both are popular sugar substitutes that have various advantages. Xylitol is most similar to refined table sugar (except for the physiological effect). It does not crystallize during baking and you can use it for yeast dough, jams and desserts. It can even be caramelized if you heat it long enough. It is different with ice cream and drinks, here erythritol is your best friend! Unlike birch sugar, erythritol doesn't quite come close to the sweetening power, so you'll need more of it. In addition, the dough tends to crystallize when it cools. Which alternative is ultimately right for you, you can decide for yourself. We find both mega!
Attention, you should keep your four-legged friend away from xylitol in any case! Even in small doses birch sugar can be deadly for dogs, so please stow your package safely and do not give your dog anything to eat that contains xylitol. If you have any questions about it, we recommend that you seek advise from your veterinarian.

Perfect for dental care!

actually good!

can bake and sweeten with it as normal as with natural sugar. i only notice the cooling effect in espresso.

I just like the xylitol. Is great to bake with and I have a good feeling with it.

If you are looking for a sugar alternative, xylitol is a good choice. It is easy to handle and I have not yet found a 1 kg package anywhere in the trade.
