Both are popular sugar substitutes that have various advantages. Xylitol is most similar to refined table sugar (except for the physiological effect). It is different with ice cream and drinks, here erythritol is your best friend! Unlike birch sugar, erythritol doesn't quite come close to the sweetening power, so you'll need more of it.
