We do not recommend freezing your marzipan. The consistency suffers when thawing and the surface then unfortunately becomes slightly greasy.

For the production of marzipan almonds are first scalded with hot water and freed from the skin. Then they are finely crushed and mixed with sugar. By the way, marzipan is not to be confused with persipan. This consists of apricot or peach kernels.
