Durch das Gefriertrocknen wird den Früchten das Wasser entzogen, wodurch der konzentrierte Fruchtzuckergehalt übrig bleibt. Das heißt: Eine Handvoll gefriergetrockneter Kiwischeiben entspricht der Zuckermenge einer deutlich größeren Portion frischer Kiwis.
