Is jasmine rice suitable for making sushi and rice pudding?

If you only have jasmine rice in your pantry, you can of course use it for sushi. However, the jasmine scented rice is not ideal because it has less starch compared to special sushi rice. For the perfect sticky rice for sushi and poké bowls, it's best to reach for our extra sticky organic sushi rice. For homemade rice pudding, we recommend our special organic rice pudding, which gets a super creamy consistency in the preparation of a spoon.

What is the difference between jasmine rice and basmati rice?

Jasmine rice and basmati rice have one thing in common: they are both very popular as a side dish for curries or in vegetable pans. In addition, both varieties belong to the long-grain rice. This means that the grains of basmati rice and jasmine rice have a length of about 6 to 8 mm. However, there are several differences between basmati rice and jasmine rice. Jasmine rice tastes more floral, while basmati rice has an earthy inherent flavor. In contrast to the somewhat sticky jasmine rice, basmati rice has a fluffy consistency. By the way, you can buy two types of basmati rice from us: brown, unhusked organic basmati rice and light organic basmati rice in the 5 kg package.

Anbau auf Plantagen in Thailand

Unser Jasminreis kommt – wie sollte es anders sein – aus biologischer Landwirtschaft in Thailand. In den sumpfig-nassen Ebenen rund um den Fluss Chao Phraya boomt dort der Reisanbau. Übrigens ist Reis auf Platz 4 der am meisten angebauten Nutzpflanzen der Welt – nach Zuckerrohr, Mais und Weizen.

Benannt nach der Jasmin Blüte

Der Jasmin Reis teilt sich nicht zufällig den Namen mit einer zarten, weißen Blume. Beim Kochen steigt ein blumiger Duft in die Nase, der an Jasmin erinnert. Wenn Dir der Geruch bekannt vorkommt, kennst ihn vermutlich von ätherischen Ölen, floralen Parfums oder Jasmintee.

Bis zu 20 Rispen pro Halm

Zur Erntesaison ist feinste Fingerspitzenarbeit angesagt. Erst werden die Reishalme von Hand geerntet. Im Anschluss werden die bis zu 200 Reiskörner pro Rispe abgepflückt und zum Trocknen auf große Planen gelegt. Zur Einschätzung: An einer Reispflanze hängen etwa 4 000 Reiskörner, für 1 kg Reis benötigt man etwa 40 000 Reiskörner. Bis die Großpackung Jasminreis gefüllt ist, vergeht also eine ganze Weile.

Getrocknet, sortiert und geschält

Nach dem Trocknen sortieren die Bauern ihre Ernte und trennen dabei die gebrochenen von den langen und unversehrten Reiskörnern. In einem nächsten Schritt wird in einer Mühle die Silberhaut und die darunter liegende Samenschale entfernt. Dadurch werden die Reiskörner länger haltbar – im Falle unseres Jasminreises bis zu 24 Monate – und haben eine kürzere Kochzeit.
