In short: the sugar isn’t added, it’s just more concentrated! During freeze-drying, water is extracted from the ripe fruit in a vacuum. This process reduces the weight by a ratio of approximately 1:10 – meaning that 10kg of fresh strawberries yields just 1kg of freeze-dried berries.
