How do the Amarena cherries get so crunchy?

If you have ever tasted Amarena cherries, you will know how incomparably aromatic and deliciously soft they are. But how does that happen? The cherries are doused with a lukewarm sugar essence and then preserved in syrup. In other words, they are candied. This not only gives the cherries their particularly fruity taste and soft consistency, but also makes them last longer. Although amaretto is also added to the traditional Italian recipe, we do not use alcohol in this case. Instead, we refine the candied fruit with something very delicate: 60 % dark chocolate! We produce our Amarena cherries without alcohol. Therefore, in principle, there is nothing against snacking on them during pregnancy. However, we do not see ourselves as experts in this area and therefore advise you to personally consult with your doctor.

The preparation of amarena cherries is not so difficult: in order for the cherries to develop their aromatic flavor, we put them in a sugary syrup. In other words: We candle the fruit. Once a crystalline sugar crust has formed, we coat the Amarena cherries with fine dark chocolate, giving them an irresistibly crunchy coating.
