No-bake chocolate and cherry brownie cake

Step 1

Leave the cherries to steep overnight in kirsch or sweet wine or pour hot water over them and leave to steep for about half an hour.

Step 2

In the meantime, grind the almonds into a fine flour in a blender or food processor until the mixture starts to turn into a paste. If you like, you can also leave a few almonds a little chunkier.

Step 3

Then add the cocoa, the remaining nut flour, coconut oil, almond butter, vanilla extract, 2-3 dates (depending on the desired sweetness) and spices and blend to a thick, sticky mixture.

Step 4

Pour about two thirds of the mixture into a small cake tin and press firmly onto the base. Put the rest to one side.

Step 5

Puree the soaked, pickled sour cherries together with 2-3 dates (depending on the desired sweetness) in a blender and spread the date-cherry paste over the pastry base.

Step 6

Shape the marzipan into a ball and roll out so that you can cut out or shape a slice the size of the cake tin, then layer on top of the cake. any leftover marzipan can be used as decoration.

Step 7

Then pour the remaining cake batter onto the marzipan layer and spread evenly.

Step 8

Place the cake in the fridge and in the meantime, prepare the dark chocolate or melt it in a bain-marie.

Step 9

Spread the chocolate cream over the cake, smooth it out and decorate with toppings of your choice, e.g. chocolate sprinkles, marzipan pieces, dried flowers or decorative cherries.

Step 10

Put the cake back in the fridge and leave to harden completely.

Step 11

Cut with a hot kitchen knife and enjoy.
