Making your own mochi – easier than it seems

Japanese mochi is traditionally served for new year's and are nowadays enjoyed around the world. You can easily prepare mochi at home with KoRo's glutinous rice flour. Simply mix the flour with water, milk or coconut milk and put on the stove at medium heat – glutinous rice flour develops its sticky properties only when heated. Knead the mixture with a wooden spoon or spatula until it reaches the desired consistency. Once the dough has a firm and sticky consistency, it should cool down a little before the next step. Transfer it to a floured work surface and form balls. Depending on your taste, you can fill them with savoury bean paste, cream cheese, sweet plum paste, ice cream or chocolate cream. Enjoy!

Like all types of flour, you should store glutinous rice flour in a dry, cool place away from light. This way it will retain the high quality you are used to from KoRo. Under optimal storage conditions, sticky rice flour will keep for at least 12 months from the date of production in its original, unopened packaging.
Unlike white rice flour, which is mostly made from white long grain rice, or our organic whole grain rice flour made from brown rice, our glutinous rice flour is made from 100% white glutinous rice. This means that when heated, it also develops its well-known sticky consistency - unlike other <a href="https://www.korodrogerie.de/en/cooking-and-baking/baking/flour">flours</a>.

Expectations fulfilled

I had discovered a recipe for butter mochi and needed sticky rice flour. Worked great and was very tasty! Ideally, I would like to see it in organic quality.
