It's best to store our cheese cubes cool and dry. If thus properly stored in the unopened original packaging, our cheese can be kept for a full 15 months!

How does the process of freeze-drying work?

Let us avoid unnecessary technical terms and keep it short: first, the cheese is cut into cubes, which are then frozen. The frozen pieces of cheese are then gently dried in a vacuum chamber by creating a negative pressure – a process which causes the frozen water to evaporate while retaining flavour and nutrients. The result is a crispy cheese with a long shelf life and versatile uses.
