What are shirataki noodles made of?

Although the name of the konjac flour may remind you of the French brandy, our flat konjac noodles have nothing to do with cognac. Instead, they are white noodles soaked in water, which are confusingly similar to "real" noodles when processed. However, the differences become clear when it comes to the ingredients and the production process: our flat shirataki noodles consist largely of water and a little konjac flour. These gluten-free noodles are made from glucomannan, a dietary fibre extracted from the root of the Asian konjac plant, also known as devil's tongue or tear tree. Adding water produces a gel-like mass that can be further processed into various foods: flat shirataki noodles, penne, lasagne, even shirataki rice is available!

Why do shirataki noodles sometimes smell sour or fishy in water?

Don't worry if the shirataki noodles smell a little sour and fishy when you open the package - of course, we didn't put any fresh fish in here. The smell comes from the konjac flour and is typical for Shirataki. Once you have rinsed the noodles with water and finished preparing them, they no longer taste or smell of fish!
