As early as the 6th century, the Chinese recognised the potential of the bright green powder, matcha, which was used at the time as a medicinal plant. It was not until some Buddhist monks emigrated to Japan and brought seeds of the tea plant with them that matcha, which had fallen into oblivion, enjoyed a renewed popularity. The monks drank matcha tea especially during their long meditation sessions.
The Matcha powder is extracted from the tea plant. Initially, it is cultivated in the same way as other types of tea. However, the tea plant is kept in the shade during the production of matcha. Why? To increase chlorophyll and amino acid production. The plant also draws its nutrients primarily from the soil. This gives the tea its unique taste and green colour. After harvesting, the tea leaves are dried and then ground in a traditional stone mill.
Since matcha is not a protected term and translates as "ground tea", there are many different qualities. Generally, distinctions are made between the ceremonial, premium and cooking qualities.

Our matcha is traditionally stone-ground and particularly finely ground - nevertheless, depending on the water temperature, frothing technique or stirring method, lumps can sometimes form.
