Why choose between coffee, dessert and a snack when you can have it all? These vegan date balls made with Medjool dates are the best proof that energy balls are anything but boring: deliciously chocolatey with a subtle hint of coffee. Pop them in a storage jar – if they ever make it that far!
-
Step 1/6
Make an espresso and leave to cool. Remove pits from the dates.
-
Step 2/6
Blend the dates, salt, cocoa powder, almond butter, coffee, oats, biscuits and half a teaspoon of vanilla until a dough-like consistency forms.
-
Step 3/6
Shape the dough into small balls and chill in the fridge for a few minutes.
-
Step 4/6
Then roll the tiramisu date balls in a little extra cocoa powder.
-
Step 5/6
Mix vegan cream cheese or mascarpone with vegan yoghurt, the remaining vanilla and, optionally, a little maple syrup until creamy, then serve with the tiramisu date energy balls. Enjoy!
