Grind quinoa to flour in a high-powered blender.
Mix ground quinoa in a bowl with salt, bread seasoning, oil, water and flax seeds.
Mix seeds in an extra bowl.
Mix 2/3 of the seed mix with the dough.
Spread dough thinly and quickly on 2 baking sheets with baking paper and sprinkle with remaining seeds.
Place in preheated oven (convection oven, 160 °C) for 10 min.
Cut crackers into pieces and then finish baking for 20 - 25 min until crackers are crispy.
