Mexican salad with crunchy topping

Even on an exciting poker night, you'll get hungry at some point and your stomach will ask for more than just snacks. No problem: Conjure up a crispy salad and add the beans as a topping. It's simple and incredibly tasty!

You need:

For the salad:

  • 1 yellow bell bell pepper
  • 1 red bell bell pepper
  • 3 tomatoes
  • 1 avocado
  • 3 spring onions
  • ½ bunch cilantro
  • ½ bunch flat leaf parsley
  • 280 g corn
  • 240 g kidney beans
  • 100 g crème fraîche (or a vegan alternative)
  • 2 tablespoons bean-pea mix

For the dressing:

How to make:

  • Wash and chop the bell bell pepper, tomato, avocado and green onions.
  • Also wash the cilantro and parsley and pluck off the leaves.
  • Drain the corn and kidney beans and put everything in a large bowl.
  • Chop the chili and garlic for the dressing and add the juice of the limes, olive oil, agave syrup and cumin. Season to taste with salt and pepper.
  • Mix the dressing with the salad and dress with a blob of crème fraîche.
  • Add a little bean and pea mix as a crunchy topping over each plate.
  • Enjoy!
