Vegan bacon pasta salad

Not your ordinary Caesar salad! Forget boring greens – here comes your new favourite salad. Our vegan bacon pasta salad combines crispy plant-based bacon with hearty pasta and a creamy cashew dressing. Ready in just about 25 minutes, it’s perfect as a quick lunch or as a side dish for your next BBQ. Simple, satisfying and totally fuss-free. Ready for your next recipe highlight?

130 g bacon alternative, vegan
2 UNIT mini romaine lettuce heads
200 g wholemeal spelt pasta
1 Whole avocado, diced
1 handful Chives, finely chopped
1 handful Parsley, finely chopped
100 g peas, frozen
60 g cashews
100 ml water
2 tbsp. lemon juice, fresh
1 tbsp. olive oil
1 Whole shallot, small
2 Tsp. mustard
2 UNIT cucumbers, pickled
1 Tsp. agave sirup
1 Tsp. salt
  • Step 1/5

    Soak the cashew nuts in water and drain the soaking water afterwards.

    Bllend all the ingredients for the dressing in a blender until smooth and set aside.

    Fry the vegan bacon alternative in a pan until crispy. Cook the pasta until al dente.

  • Step 4/5

    Arrange the cooked pasta together with the avocado, peas, fresh herbs, and lettuce in a bowl. Pour the creamy dressing over it and mix everything well.

  • Step 5/5

    Finally, garnish the salad with the bacon alternative. Put a little bit of it aside to top off the salad at the very end so everything stays crunchy.
