Roughly chop the seitan steak and add it to a food processor together with the tomato paste, mustard, 1 tsp soy sauce, starch, rolled oats, oil, salt, pepper, and herbs. Process the ingredients until you have a firm, shapeable mixture.

Shape the mixture into small balls. Bake the Köttbullar at 180°C fan oven for 20–30 minutes, or pan-fry them in a little oil until golden brown.

Remove the finished balls from the pan. Add water, brown almond butter, soy sauce (to taste), salt, and pepper to the same pan and stir thoroughly. Let the sauce simmer over low heat until it thickens slightly.
