Vegan cherry pie with nuts

At your next baking session, try this vegan chocolate cake with cherries.

25 g Vanilla pudding powder
2 tbsp. Carob powder (or cocoa powder)
120 g Flour (e.g. teff flour)
2 tbsp. Coconut blossom sugar
4 tbsp. ground almonds
1 tbsp. Coconut oil
0.5 Tsp. Baking powder
1 Tsp. Baking soda
10 UNIT Medjool dates
15 UNIT Cherries
0.5 tbsp. Apple cider vinegar
120 ml hot water
1 Spritzer Optional: Bittermandelaroma
  • Step 1/8

    Soak dates in hot water for 10 min.

  • Step 2/8

    Mix all dry ingredients.

  • Step 3/8

    Puree the dates together with the soaking water.

  • Step 4/8

    Add the remaining wet ingredients and the date puree to the dry ingredients and mix.

  • Step 5/8

    Cut cherries in half and fold ten of them into the batter.

  • Step 6/8

    Pour the dough into a springform pan (18 cm) and smooth it out.

  • Step 7/8

    Add the remaining cherries and additional chopped almonds on top of the cake.

  • Step 8/8

    Bake for approx. 40-45 minutes at 170 °C (test for doneness).
