Pea and mint fritters with apple and horseradish cream and cucumber salad

These fritters not only taste good, their bright green makes them an absolute eye-catcher.

1 UNIT Gurke
125 Flour
1 UNIT Lemon
0 bunch Dill
500 Peas
1 UNIT Apple
100 Yogurt
2 Eggs
1 bunch Spring onions
1 bunch Mint
200 ml Cream
1 Pinch Pepper
1 Pinch Salt
3 tbsp. Meerrettich
  • Step 1/7

    Wash the cucumber and cut into thin slices. Mix yogurt, 2 tablespoons lemon juice, salt, pepper and dill and add to the cucumbers.

  • Step 2/7

    Boil peas briefly and drain.

  • Step 3/7

    Separate mint from stems, wash spring onions and chop both.

  • Step 4/7

    Puree peas, eggs, mint and flour in a blender until smooth.

  • Step 5/7

    Season with salt and pepper, fry shapes and let stand briefly.

  • Step 6/7

    Whip cream until stiff, finely grate apple, mix with lemon juice, horseradish and cream.

  • Step 7/7

    Fry patties well on both sides and serve with horseradish cream and cucumber salad.
