Oil free basil walnut pesto

For your next Italian evening pesto without oil very easy to make yourself: Broccoli Walnut Pesto.

180 g Walnut kernel
400 g Broccoli, cooked (frozen or fresh)
160 g Basil (frozen or fresh)
15 g Salt
70 g Yeast flakes
70 ml Water or unsweetened vegetable drink
1 Lemon juice
4 cloves Garlic cloves (according to taste)
  • Step 1/3

    Steam or stew the broccoli for a few minutes. It should not become too soft in the process.

  • Step 2/3

    Blend broccoli, walnut kernels, basil, garlic, water/vegetable drink, yeast flakes, salt, and lemon juice in blender until creamy pesto forms; use pestle to help if necessary.

  • Step 3/3

    Recommendation: Bottle the pesto in a few jars and freeze some to always have some on hand.
