Cinnamon bun for breakfast? No problem!
Preheat the oven to 180 °C top/bottom heat.
Blend rolled oats, chia seeds, baking powder, banana, protein powder, and oat drink in a blender until you reach a sponge cake-like consistency.
For the filling, mix coconut yogurt, vanilla pudding powder and some cinnamon in a small bowl.
For the topping, mix 1 tsp cinnamon and coconut blossom sugar.
Place about 2/3 of your oatmeal mixture in an oven-safe bowl and cover the layer with a thin layer of the cinnamon-sugar mixture.
Then place your filling in the center and cover it with the remaining dough.
Finally, top with the remaining cinnamon-sugar mixture and bake for about 15-20 minutes.
As a final step, you can make a "swirl" of coconut yogurt as a topping.
