Chocolate kisses

Kisses are great, but chocolate kisses are better! Especially when they're homemade. Here's a recipe for you to make the treat yourself.

1 Pinch salt
150 powdered sugar
50 ground almonds
0.5 Tsp. tartar baking powder
3 tbsp. raspberry jam
100 white chocolate
100 dark chocolate
  • Step 1/7

    Preheat the oven to 160 degrees Celsius.

  • Step 2/7

    Whip egg white (approx. 35g) in a bowl with salt and then add 50g icing sugar and almonds and stir well with a spoon.

  • Step 3/7

    Use two spoons to divide the mixture into about 10 blobs and place them on a baking tray lined with baking paper. This will ensure that they bake into a nice round shape. Place the tray in the oven for about 20 minutes.

  • Step 4/7

    For the filling, mix two egg whites (70g) with 100g icing sugar and place the bowl on a bain-marie. Whisk for about 10 minutes until stiff, remove from the bain-marie and continue whisking for another 5–7 minutes.

  • Step 5/7

    Transfer the mixture to a piping bag with a large nozzle and divide it between the almond bases. Simply place in the centre of each and press out straight (not in a circle).

  • Step 6/7

    Place the chocolate kisses in the fridge for 20–30 minutes.

  • Step 7/7

    Melt some chocolate and either dip the kisses in it headfirst or pour the chocolate over them and place back in the fridge.
