Get to know: Truffles

Few things in life are only black and white - but truffles are! The noble mushroom is only available in black and white. However, the tubular mushrooms differ not only in their color, but also in their taste and aroma. White truffles are usually sliced raw over dishes, as they have a stronger truffle scent and would lose their flavor when heated. Instead, its black counterpart smells less and tastes wonderfully intensely truffly.

Rare treasure

Truffle mushrooms are a real rarity that can mainly be found in France, Italy and Australia. This is why there are two seasons, at least for the black truffle, one between the beginning of December and mid-March in the northern hemisphere and one from July to September in the southern hemisphere. The white truffle is in season between October and the end of December and can only be found in Italy. Speaking of finding: The black truffle mushroom tubers are usually hidden 10 to 20 cm deep in the ground, the white ones even up to 40 cm deep. However, as both varieties are highly sought-after and a good nose is needed to find the mushrooms, they are often searched for with the help of truffle pigs or dogs. Even if truffle pigs like truffles, they are not the ideal companion, as they find the precious mushrooms just as delicious as we do. This is why truffle dogs are currently used, and their special training can take up to two years! But even with these experienced companions, a maximum of 80 grams of truffles are usually found per day - so it's no wonder that you have to pay around €2000 for 1 kg of fresh black truffles and as much as €3000 - 5000 for white ones.

What do truffles go with?

Before you think to yourself, no matter what, €2000 for a dish is not possible: In fact, only around 10-15 grams of fresh truffle are used per meal by finely slicing the truffle with a truffle slicer - you guessed it. Truffles are usually eaten with pasta or in sauces with meat. Except in Spain, where truffles are also eaten on a ham and cheese toast called bikini. Whether fast food or delicatessen - we think truffles taste good in any form. And let's be honest, very few of us go to Michelin-starred restaurants regularly, if at all, but why should we miss out on the wonderful aroma of truffles?
