Preheat the oven to 180 degrees top/bottom heat. To make vegan buttermilk, first mix the oat drink with the apple cider vinegar and set aside.
Mix the dry ingredients in a mixing bowl. Mash the banana in a smaller bowl and add coconut oil, coconut blossom sugar and the vegan "buttermilk".
Stir the whole mixture just briefly until everything is mixed.
Pour the dough into a loaf pan lined with baking paper and bake for 40-45 minutes.
