Thai green curry

A change from red or yellow curry: a simple and delicious vegetable curry with zucchini, broccoli and spinach that is quick to prepare.

200 g Frozen spinach
300 g Broccoli
200 g Zucchini
200 ml Coconutmilch
1 tbsp. Oil (coconut or olive)
1 Stange Spring onion
1 Tsp. Thai green curry paste
300 ml Vegetable broth
0 as necessary Salt and pepper
0 as necessary roasted peanuts
  • Step 1/6

    Cut zucchini and broccoli into rough pieces and spring onion into fine rings.

  • Step 2/6

    Heat oil. Sauté zucchini, broccoli and spinach.

  • Step 3/6

    Stir in curry paste, add water and coconut milk and simmer for 8-10 min.

  • Step 4/6

    Just before the end of the cooking time, add half of the spring onion.

  • Step 5/6

    Season to taste with salt and pepper.

  • Step 6/6

    Best served with rice and decorated with the remaining green onion and peanuts.
