Sunny Side Up Physalis Eggs Vegan – quick and tasty homemade recipe with pantry staples.

1 handful a handful of freeze-dried physalis halves
1 some some (vegan) white chocolate
0.5 Tsp. 1/2 tsp coconut oil
4 tbsp. 3-4 tbsp (vegan) yoghurt
1 tbsp. 1 tbsp agave or rice syrup
1 Pinch a pinch of vanilla
  • Step 1/4

    depending on the preferred version: melt white chocolate together with 1/2 tsp of coconut oil or mix vegan yoghurt with sweetener of choice and vanilla.

  • Step 2/4

    use a spoon to create little sunny-side-up egg white shapes with the melted chocolate or vegan yoghurt mix on a piece of parchment paper.

  • Step 3/4

    place one freeze-dried physalis in the middle of each egg white shape.

  • Step 4/4

    place the white chocolate physalis ‘eggs’ in the fridge for 30min, the vegan yoghurt physalis ‘eggs’ in the freezer for 1h to set and enjoy.
