Preheat the oven to 200°C.
Wash and finely grate the carrots.
Add low-fat curd cheese and eggs.
Gradually add the dry ingredients to the liquid measure and mix everything with a spoon or your hands, as the mixture is very compact.
Pour the dough into a loaf pan lined with baking paper.
Bake the bread at 200°C on the middle shelf for 50 minutes.
Remove the finished bread from the oven and let it cool completely on a cooling rack.
