
Sweet and creamy, we guarantee it with this recipe! Oatmeal is one of the most popular breakfast ideas ever! Why? Because it's quick to prepare, satisfies for a long time and is super versatile. For this version you need, in addition to oatmeal, coconut and cocoa powder. The result is something to be proud of: a super creamy chocolate-coconut-satmeal. Dried mulberries, coconut chips, and fresh fruit (figs) go especially well with this combination! Bring culinary delight to your breakfast table with this variation on boring oatmeal.
Ingredients (for one serving):
- 45 g rolled oats
- 15 g melting flakes
- 1 tablespoon coconut flakes
- 2 tablespoons cocoa powder
- 5 Medjool dates, pitted
- 300ml coconut drink, or milk
- 2 tbsp coconut milk
- 1 tbsp coconut oil
- Bourbon vanilla, to taste
Toppings:
For toppings we suggest you use for this recipe: coconut chips, mulberries, fresh figs or berries.
Preparation
First, put the coconut drink or milk in a blender with the pitted Medjool dates and puree until smooth. Then you can carefully heat the coconut milk with the coconut drink mixture in a saucepan. Just add the oatmeal and melting flakes and cook on medium heat at first, later on low heat, stirring constantly. The oatmeal should have a creamy consistency. Stir in the cocoa powder, coconut flakes, bourbon vanilla and let the coconut oatmeal cool for about 5 minutes. Finally, you should also stir in the coconut oil and arrange in a bowl with all the toppings.
