Vegan pistachio almond cake

Nutty and sweet - can it get any better? Oh yes, and it is also vegan, the delicious pistachio almond cake. Fresh from the oven, it tastes especially good and also looks great. A real treat for the eye and for the palate.

Vegan pistachio almond cake

Ingredients

Preparation time: 30 minutes | Waiting time: 1 hour 25 minutes

You will need: Oven | Loaf pan | 10 x 30 cm Baking paper | Kitchen scales |Cutting board | Knife | Bowls | Hand mixer | Whisk | Strainer | Dough scraper

  • 250 g powdered sugar
  • 5 tablespoons water
  • 100 g pistachios, roasted and salted

Preparation

Step 1

Preheat oven (top/bottom heat: 180 °C/fan oven: 160 °C). Line loaf pan (30 cm) with baking paper or alternatively grease with margarine and dust with flour.

Step 2

For the dough, roughly chop the pistachios. Mix margarine, sugar and vanilla sugar in a bowl with a hand mixer (whisk) until creamy. Sift flour into another bowl and mix with almonds, baking powder and 1 pinch of salt.

Step 3

Stir flour mixture and almond drink into margarine-butter mixture in 3 portions each on low speed with hand mixer (or whisk) until a homogeneous dough is formed. Fold in chopped pistachios with a dough scraper.

Step 4

Pour batter into loaf pan and smooth out. Bake pistachio almond cake in the center of the oven for 55-60 minutes. Remove from oven and let cool in pan for about 15 minutes. Then turn out of the pan and let cool completely.

Tip: The cake is done when you poke it with a wooden skewer and no more dough sticks to the skewer.

Step 5

Meanwhile, remove the roasted, salted pistachios from their shells and roughly chop them. For the glaze, sift the powdered sugar and stir with the water until smooth and thick. Brush the cooled cake with the glaze and sprinkle with the pistachios.

Tip: Add the water to the powdered sugar by tablespoons, stirring well after each tablespoon of water until smooth. Add only enough water to reach the desired consistency. Even a few drops of water can make the icing much more liquid.
