Gluten free pancakes with goji berries

Pancakes, or as they say in English "pancakes", are often eaten for breakfast. No problem, because this recipe for gluten-free pancakes with goji berries offers a delicious combination of nutty flavor and pleasant sweetness.

Gluten free pancakes with goji berries


Preparation time: 15 minutes

You will need:Bowl | Screw-top jar with lid | Pan (coated)

Ingredients: 555 kcal energy | 19 g protein | 36 g fat | 38 g carbohydrates

For the batter:

  • 500 ml soy drink
  • 3 eggs (size: M)
  • 12 tablespoons rice flour
  • 4 pinches of salt
  • Sunflower oil for frying

For the garnish:


Step 1

Place the soy drink, eggs, rice flour and salt in a clean screw-top jar and shake well. Heat a coated frying pan over medium heat. Add a little oil to the pan if desired, pour in the batter and spread it around the pan. Bake until golden brown on both sides.

Step 2

Garnish finished pancakes with coconut puree, chia seeds, flax seeds, goji berries, almonds and mint and serve. Tip: For the vegan version, simply replace the eggs with 2 ripe bananas.
