The supermarkets offer an almost too wide variety of mayonnaise, but most, if not all, of them is made with eggs – sadly, still coming from animals kept in battery cages. Really? The 21st century is calling! It says it is time for us at KoRo to develope a vegan mayo capable of improving this situation. Our mayo is plant-based and incredibly fluffy. You are going to notice no difference, when you add our delicious mayo to your potato salad or dip your chips in it. Moreover, a mayonnaise free of animal suffering is not just tasty, but good for your soul too.

Our vegan mayonnaise tastes amazing on its own. If you still want a little variety to your daily portion of fries, you can also refine the mayo with flavours of your choice. With a little finely chopped garlic, you can make an aioli in no time. You can also pull out your wasabi paste and get spicy-hot mayo in no time. It's not for nothing that mayo is also known as "salad mayonnaise". Once you've stirred a teaspoon of mayo into your yoghurt dressing, you won't want to miss the creaminess. This is due to the particularly high binding capacity that comes from the rapeseed oil in the mayo. As you can see, our mayonnaise is a real all-rounder. But here's the best part: with our vegan egg-free mayo, you can also make an egg salad without eggs. Not only does it sound like magic, it also tastes absolutely magical.
The special thing about our vegan mayonnaise
You've probably understood by now that our mayo doesn't need any egg at all and is still wonderfully creamy. In general, we are very selective about our ingredients. We don't use palm oil or sunflower oil with its own flavour like other manufacturers, but instead use organic rapeseed oil. In combination with pea protein, this creates a light and fluffy consistency. Who would dare to deny that mayo is an absolute delicacy? It's a good thing that our vegan mayonnaise comes in a large jar - for an extra-large treat.

Die Herkunft der Mayonnaise wird in der Hafenstadt Mahón auf Menorca vermutet. Die Theorie für den dortigen Ursprung besagt, dass die „Salsa Mahonesa“ zu Ehren des damaligen Eroberers kreiert wurde. Was für ein glücklicher Mann – wer kann schon von sich behaupten, dass einem solch eine beliebte Sauce gewidmet ist?

Viele konventionelle Mayonnaisen enstehen auf Basis von Palmöl oder Sonnenblumenöl. Wir hingegen haben uns für Bio-Rapsöl als Basis entschieden, da dieses Öl mehr Omega-3-Fettsäuren aufweist als die anderen beiden. Zudem hat Rapsöl keinen starken Eigengeschmack und verhindert somit, dass die Mayonnaise bitter schmeckt.

Normalerweise ist Eigelb in Mayonnaise unerlässlich, da es aus Wasser und Öl eine Emulsion herstellt. Aber was das Eigelb kann, kann Erbsenprotein schon lange: Das pflanzliche Eiweiß ist stark bindungsfähig und bringt so die ultimative Cremigkeit in die Mayonnaise – ganz ohne Ei.

Wenn die Mayonnaise erstmal fertig gerührt und ultimativ cremig ist, wird sie in Gläser abgefüllt. So sparen wir eine Menge Verpackungsmüll. Das wird vor allem deutlich im Vergleich zu den einzelnen Portionsbeuteln, die Du womöglich noch vom Schwimmbad-Kiosk kennst. Zudem machen die Mayo-Gläser auch leer und ausgespült eine gute Figur, wenn Du sie zur Aufbewahrung von Wattestäbchen oder etwa Deiner Gewürzsammlung nutzt.
