Scandal surrounding "tonka" sugar! The well-known Berlin-based company KoRo has recently introduced a product to its range that is causing quite a stir. Among other things, the company is known for its unusual fripperies such as "tonka sugar". Except that it hardly contains any tonka! Investigative research on the KoRo website revealed that only 3% of the product consists of ground tonka bean. After this scandalous shock news, we did the taste test: sweet almond aroma, fine rum note, vanilla light - unfortunately awesome! But what does KoRo have to say about it! Scandalously good: Tonka sugar as an alternative to vanilla sugar

When we spread bad publicity about ourselves on the net, either the marketing team goes crazy - or we question our own products self-critically again and again. In the beginning, the list of ingredients made us wonder, too. "Only" three percent ground tonka bean and 97 percent raw cane sugar may seem like an uneven mix - but in fact, the unique flavour of the tonka beans can spread much better if it is dosed low but precisely. The aroma of the bean is incredibly intense and could otherwise quickly taste too dominant or overwhelming. Many other suppliers therefore use only two percent tonka, but we have found just the right balance with three. Tonka sugar is not used in desserts like conventional sweeteners, but like vanilla sugar. It adds that little pinch of something special to your cake, pastry or rice pudding. 

Good recipes with tonka sugar

Probably the best feature of our tonka sugar is that it has almost all the advantages of vanilla sugar, but is still much cheaper. This means you don't have to save money, and thanks to the 500 g advantage pack, you have enough on hand for the next baking session anyway. Tonka sugar likes everything sweet! A pinch in the rice pudding? Really delicious. For baking cakes? A dream. Tonkabohnen enthalten Cumarin, der beispielsweise auch in Cassia-Zimt vorkommt. Höhere Dosen davon solltest Du vermeiden. Die European Food Safety Authority (EFSA) und das Bundesamt für Risikobewertung (BfR) legen beide eine tolerierbare Tagesdosis von 0,1 mg/kg fest. Diesen Wert kannst Du mit unserem Tonkazucker aber kaum erreichen. Solange Du also nicht gleich die ganze Zuckerpackung verputzt (was wir Dir ohnehin nicht raten würden), musst Du Dir keine Gedanken machen.
Unser Tonkazucker besteht aus 97 % Rohrohrzucker und 3 % gemahlenen Tonkabohnen und ist aufgrund seines ähnlichen Aromas eine leckere Alternative zu Vanillezucker. Ihr großer Vorteil: Trotz des ähnlichen (und unserer Meinung nach sogar besseren) Geschmacks zu Vanillezucker ist Tonkazucker deutlich günstiger. Und warum nur 3 % gemahlene Tonkabohne? Ganz einfach: Ihr Aroma ist unfassbar intensiv und sie könnte sonst schnell zu dominant schmecken. Bei dieser Menge haben wir genau die richtige Balance gefunden.
Der Tonkazucker kommt auf 393 kcal je 100 g. Alle Nährwerte kannst Du wie gewohnt der Tabelle neben bzw. unter der Produktbeschreibung entnehmen.
Tonkazucker mag alles, was süß ist! Zu Milchreis? Richtig lecker. Im Kuchen? Ein Träumchen. Ihren versüßenden Auftritt dürfen die Tonkabohnen beispielsweise in den Haselnuss-Schoko-Kugeln oder den weihnachtlichen Mohn-Marzipan-Kugeln mit Tonka feiern.
Tonkabohnen sind genau genommen die Samen des Tonkabaums, der hauptsächlich in den tropischen Wäldern Südamerikas wächst. Tonka schmeckt ähnlich wie Vanille und hat eine süße Note von Mandeln und Rum. Eingesetzt wird die gemahlene Bohne aber immer in sehr kleinen Mengen. Damit ergänzt sie von Kuchen über Milchreis bis hin zu Gebäckstücken sämtliche Süßspeisen.
Unser Tonkazucker besteht zu 97 % aus Bio Rohrohrzucker und zu 3 % aus gemahlenen Tonkabohnen und ist zum Verfeinern und Süßen gedacht. Tonkazucker ist also sicher kein Gemüse, aber: Über gesund oder ungesund entscheidet letztendlich eine ausgewogene und abwechslungsreiche Ernährung. Wir tun uns deswegen schwer, Lebensmittel per se in gut und schlecht einzuteilen. Schließlich kann ein Stück Gebäck am Sonntag genauso zu einer ausgewogenen Ernährung gehören wie ein bunter Salat. Wie immer gilt: ‘balance is key’!
Den Tonkazucker bewahrst Du bestenfalls an einem trockenen, kühlen und lichtgeschützten Ort auf. Dann ist er direkt nach der Produktion für mindestens 24 Monate haltbar.
