Banana bread with pecan kernels and poppy seeds


You can't really go wrong with banana bread. That's why we're presenting another delicious variation here. In addition to bananas, this recipe also uses poppy seeds, walnuts and pecan kernels. The result is super moist and sweet, making it the perfect snack between meals or a better alternative to a slice of cake. It's also great to take away and enjoy with friends or family.

Ingredients for one loaf tin:

  • 3 large, ripe bananas (or 4-5 small bananas)
  • 150 g spelt flour
  • 1 tsp baking powder
  • 50 g rolled oats
  • 30 g ground almonds
  • 1 tbsp coconut oil
  • 50 g walnut kernels
  • 50 g pecan kernels
  • 2 tbsp poppy seeds
  • 300 ml (almond) milk
  • some sweetener if necessary
  • 1 tsp coconut oil to grease the tin
  • for the garnish: 1 banana

Preparation

First you should preheat the oven to 180°C. Mash the bananas with a fork. Then mix together the flour, rolled oats, ground almonds, baking powder, poppy seeds and sweetener, if using. Add the milk and mix everything into a smooth batter. You can then finely chop the walnuts and pecan kernels and mix them into the batter. Then you should also stir the coconut oil into the batter. The batter should flow thickly from the spoon, add more milk if necessary. Then grease a loaf tin with coconut oil and spread the batter in it. Then cut 1 banana in half lengthways and place the two slices on top of the batter. The banana bread should be baked for around 40 minutes. Leave the finished bread to cool in the tin before cutting it. We recommend enjoying the bread with nut butter, jam or chocolate cream.
