Cauliflower mango curry

Curries warm you up from the inside and give strength on cold gray winter days. With the unique combination of mango and cauliflower, you can dare to do something unusual with this recipe.

Cauliflower mango curry

Curries are easy and quick to make. Especially on cold days, the spicy dish warms you from the inside. Today we suggest you an unusual combination of the classic winter vegetable cauliflower and the fruity-sweet mango.

Ingredients for 1-2 persons (depending on the amount of side dishes)

  • 1 onion
  • 1 red bell bell pepper
  • 1 cauliflower
  • 40g dried mango
  • 100g peas
  • 2 tsp yellow curry paste
  • 1 tbsp cranberries
  • 250ml vegetable broth
  • 250g natural yogurt
  • 1 tsp cornstarch
  • curry, pepper, 8 herbs, curry powder

As a side dish we recommend rice, potatoes or quinoa.

Preparation

  • First sauté the onion, then the vegetables in a frying pan or wok.
  • Deglaze with vegetable broth and simmer until done.
  • Mix natural yogurt and cornstarch, add to the vegetables and season everything well.
  • Enjoy with quinoa, rice or potatoes, depending on your preference.
