Vegetable curry

Curry with extra vegetables for our veggies

Vegetable curry


  • Red bell bell pepper: 1 piece
  • Zucchini: 1 piece
  • Eggplant: 1 piece
  • Mushrooms: 200 g
  • Onion: 1 piece
  • Clove of garlic: 1 piece
  • rice: 180 g
  • coconut milk: 800 ml
  • salt: 0.5 pinch(s)
  • paprika powder: 1 pinch(s)
  • Curry powder: 1 pinch(s)
  • Turmeric powder: 1 pinch(s)


Step 1

Chop the onion and garlic and heat in a pan with a little oil and sauté until translucent. Cook the rice in salted water according to instructions.

Step 2

Meanwhile, wash and chop the vegetables. First add the peppers to the onions and saute. After about 5 minutes, add the zucchini. After another 5 minutes, add the mushrooms and eggplant as well and mix the vegetables well.

Step 3

Add coconut milk to the vegetables, mix and then season with salt, turmeric powder, curry powder, paprika powder and cayenne bell pepper.
