Vegan onion tart

If you get tired of all the sweet cakes, you can try your hand at this vegan two-berry cake with tofu.

For the dough:
  • yeast: 1 cube
  • warm water: 2 tbsp.
  • date syrup: 1 tsp
  • flour: 250 g
  • soy yogurt: 50 g
  • salt: 1 tsp
  • oat drink: 150 ml
For the topping:


Step 1

For the dough: mix yeast, water, date syrup and let stand for 5-10 min. Then knead with the remaining ingredients for 7-8 min.

Step 2

Shape the dough into a ball and cover with flour. Cover and let rest for about 30-60 min until doubled in size.

Step 3

For the topping: cut onions into fine rings and sauté with a little oil until translucent, then bind with 1 tbsp. flour.

Step 4

Cut tofu into cubes and fry as well.

Step 5

Mix the remaining ingredients like soy yogurt, yeast flakes, cashew puree and herbs in a bowl. Now add the fried tofu and onions to it.

Step 6

Roll out the dough on a floured work surface to 36 cm circle. Grease a 26 cm diameter baking pan or ring and line with the dough, leaving a 5 cm border.

Step 7

Let the dough rise again in the pan for about 30 minutes.

Step 8

Then pour in the filling and sprinkle with a few yeast flakes.

Step 9

Now bake the cake at 200°C top/bottom heat for about 35 - 40 min.
