
Ingredients
- Pumpkin puree: 1.5 cup
- maple syrup: 1.5 cup
- melted coconut oil: 3 tablespoons
- egg: 1 piece
- vanilla bean: 1 piece
- Vegetable milk: 3 tbsp.
- chickpea flour: 1 cup
- cocoa powder: 0.5 cup
- baking powder: 0.5 tsp
- Cinnamon: 0.5 tsp
- Nutmeg: 0.25 tsp
- Ground ginger: 0.5 tsp
- Cardamom: 0.5 tsp
- Salt: 0.25 tsp
- shredded coconut: 0.5 cup
- chocolate drops: 0.5 cup
Preparation
Step 1
Preheat the oven to 180 degrees Celsius convection.
Step 2
Mix pumpkin, maple syrup, coconut oil, egg, vanilla and milk together until smooth.
Step 3
Then mix flour, cocoa, baking powder, salt and spices together in a separate bowl.
Step 4
Then mix the dry flour mixture with the pumpkin mixture and stir in the shredded coconut and chocolate.
Step 5
Pour the mixture into a loaf pan and decorate with 2 or 3 tablespoons of shredded coconut and chocolate.
Step 6
Finally, bake in the oven for 55-60 minutes.
